This Spicy Mango Salad is a symphony of flavours that dances on your taste buds, combining the sweetness of ripe mangoes with the gentle kick of the ever-tempting Scotch Bonnet.
Ingredients
- 30g cashew nuts
- 1 medium mango
- 1 medium carrot
- ½ cucumber
- ¼ lime
- 5 cherry tomatoes
- 2 cloves garlic
- Pinch of coriander
- Dash of Jackanapes Sweet Scotch Bonnet Hot Sauce
Instructions
Slice the carrot and cucumber thinly into strips. Slice the tomatoes in half. Cut the mango into slices (be careful to use a sharp knife – otherwise the juice will come out!). Finely dice the garlic. Add all to a bowl with the cashew nuts.
Squeeze the lime segment and pour the Sweet Scotch Bonnet hot sauce over the salad. Sprinkle diced coriander over to taste.
