Ingredients
Nachos
- 250g of lean minced beef
- 1 Red Onion
- 1 Beef Stock Cube
- Salt & Pepper
- Large bag of nachos or tortilla chips
Cheese Sauce
- 500ml milk
- 4 tbsp plain flour
- 50g butter
- 100g grated strong cheddar
- English mustard
Salsa
- 6 large salad tomatoes
- ½ red onion
- 2 garlic cloves
- 1-2 medium chillies (jalapeños work well)
- ¼ lime
- Pinch of coriander
Instructions
Cheese Sauce
1. Add the butter to a medium hot pan until melted, then add the flour a small bit at a time, mixing together until both are combined into a roux.
2. Add the milk to the roux a splash at a time and whisk until smooth. Note: Adding a bit at a time prevents lumps appearing.
3. Turn down the hob heat to a low temperature. Add the cheddar cheese and ½ teaspoon of English mustard.
Make the Salsa
1. Chop the tomatoes, garlic, chillies, red onion, coriander and add to a blender.
2. Add a squeeze of lime juice and a dash of Jackanapes Mexican Hot Sauce.
3. Pulse the blender briefly – you want it to still be chunky!
Preparing Nachos
1. Fry the minced beef with 1 Beef Stock Cube, adding a little salt and pepper seasoning and add your chopped onion.
2. Once the mince is ready, using an oven dish, put in a layer of Nachos or Tortilla chips followed by a layer of mince. Then pour in a little cheese sauce and salsa.
3. Repeat this process until all of your layers are complete then top off with Jackanapes Jalapeño Hot Sauce, more grated cheese and a squeeze of lime.
